These farms are small - they are about two to three hectares only - each one is set up with micro-wet-milling operations, which has been mechanical in keeping the waters of Peru clear and unpolluted.

The coffee plants are very special because they are grown in shade and their ripe cherries are picked from May to September. Then they are passed on to skilled people for the purpose pulping them and put them into the fermentation tanks. The coffee beans are later are later transported to the nearest market which would be about a few hours from the farm by mules or by foot.

What affected the price of the famous flavors of coffee? It is all depends on the demand for the coffee. When there are not many buyers (at times there would be only one) the price of the beans falls dramatically as there are no warehouses to store the beans. Furthermore if there are no storing facilities the beans would damage fast and would have to be thrown away. As you can see the demand for the organic Peruvian coffee is important in determining the price.

As we mentioned earlier most farms are unorganized and for the past decade, more than 25 percent of these unorganized sector farmers have finally joined the cooperative movements which in turn have some connection with the Fair Trade organic networks. This association is to impel the organic Peruvian coffee growers onto the second largest coffee suppliers in the world after Mexico. With this connection also they now can get both the best price and the right acknowledgement.
